I grew up in the business. My father owned a company and when I was old enough to work, he trained me on all of the ins and outs of commercial kitchen exhaust .
His business was a twenty-four-hour business because not all commercial kitchens are closed at the same time. Sometimes we would start a job as early as four in the morning or as late at midnight.
